CHICKEN ALFREDO ROLLER UPS

This is the creamiest, most delicious filling ever, full of Parmesan and garlicky goodness. It’s all wrapped in a buttery crescent.

These babies can be topped with an easy cheese sauce or even covered in Italian breadcrumbs.

The cheese sauce is a great addition, but these babies are delicious even without it!

Ingredients

  • Olive oil one tablespoon
  • One skinless and boneless chicken breast
  • One 8-ounce cream cheese package at room temperature
  • Parmesan cheese, freshly grated, 1/4 cup
  • Chop 2 tablespoons of chives
  • Half a teaspoon of garlic powder
  • To taste, add Kosher Salt and freshly ground Black Pepper
  • Crescent rolls one 8-ounce tube
  • 1/2 cup Italian-style bread crumbs

FOR THE OPTIONAL CHEESE SAUCE

  • One tablespoon of unsalted butter
  • All-purpose flour, one tablespoon
  • 1/2 cup milk
  • To taste, add Kosher Salt and freshly ground Black Pepper
  • Add more cheese to your taste.

Instructions

  • Preheat oven to 375°F. Line a baking tray with parchment paper or a silicone mat. Set aside.
  • Heat olive oil in a medium skillet on medium heat.
  • Add salt and pepper to taste. Add to skillet, and cook for 3-4 minutes on each side, flipping the pan once. Let the shredded chicken cool down before shredding.
  • Combine the chicken, Parmesan cheese, chives, and garlic powder in a large bowl. Add salt and pepper to taste.
  • Separate the rolls into eight triangles. Each triangle should be topped with a generous tablespoon of the chicken mix.
  • Roll each triangle starting with the wide side, tucking in the ends, then dredge it in breadcrumbs and press to coat. Place the seam-side down on the baking sheet prepared and bake for 10-12 minutes until golden brown.
  • Melt butter in a small pan over medium heat. Stir in flour for about a minute until it is lightly browned. Whisk in the milk gradually and continue to whisk constantly until it is slightly thickened (about 3-4 minutes). Season with salt and black pepper. Stir in the cheese a handful at a time until smooth. This should take about 1-2 minutes.
