Sheet Pan Meatballs With Tomato Salad And Green Sauce

Sheet pan meatballs are a staple in our house. They are a favorite! They’re easy to clean up, don’t make a mess, and are still oven-crisp.

These meatballs are incredibly juicy and flavorful thanks to a delicious green sauce made of parsley, cilantro, and walnuts with capers and garlic. It will be served both inside and on top. They’re great with juicy tomatoes marinated in tzatziki. You can also swoop through the sauce and douse it in green sauce. Grab yourself some buttery crusty bread to go along with them.

How to Make These Meatballs! (Sheet Pan for the win!)

Let’s get started. Get out your sheet pans and food processor.

  1. Green Sauce. Process everything in the food processor until very finely chopped (but not into a paste). This is the flavor base! Transfer half the flavor base into a large bowl and use the remainder to make the sauce.
  2. Meatballs. In a large bowl, combine the ground beef, egg, paprika, and salt. Add panko. Roll the meatballs into balls. Place the rolled-up meatballs onto a sheet pan and brush with olive oils. Bake!

Serve the meatballs with creamy tzatziki topped with green sauce. Add a simple tomato salad and rustic bread.

Ingredients

Green Sauce:

  • Two garlic cloves
  • 1 Parsley
  • One cilantro
  • 1/4 Capers You can also find out more about pitted castelvetrano olives
  • 1/2 Walnuts
  • juice and zest of a Lemon
  • 1/2 Olive oil
  • salt Taste

Sheet pan Meatballs:

  • One egg
  • One tablespoon Paprika
  • One teaspoon Salt
  • 1 Panko
  • 1 lb. Ground beef The ButcherBox grass-fed grass-finished ground beef is of the highest quality.

Extras:

  • 1 Small baguette Serving
  • One tzatziki I used store-bought products

: Marinated Tomato Salad

  • 1 pound Cherry or grape tomatoes, Half or quartered

  • Two tablespoons Olive oil
  • One tablespoon vinegar. You can also find out more about Lemon juice
  • One tablespoon удуе? Minced herbs: I like parsley
  • Salt to taste (I use between 1/2 and 3/4 teaspoons of kosher sea salt)
  • 1 Cucumber Sliced

INSTRUCTIONS

  1. Preheat the oven to 425°.
  2. Add some cucumber slices to your tomato Salad.
  3. Then, pulse the parsley, cilantro capers, and walnuts until they are finely chopped (not creamy or paste-like – just a fine chop). You can also do this by yourself.
  4. Transfer half the flavor base into a large bowl to make the meatballs. Mix all the other ingredients for meatballs with your hands. Roll into balls and bake for 10-12 minutes.
  5. To make the sauce, add the remaining half of the flavoring base into a smaller bowl. Add lemon zest, lemon juice, olive, and season with salt and pepper. If you like it hot, add red pepper flakes. The mixture should resemble a loose chimichurri or pesto.
  6. Serve meatballs with a tzatziki sauce, rustic bread, and a tomato salad. Then drizzle, dip, and swish it all through the punchy green sauce. HUGE, HUGE FLAVORS It’s so good!
