Vegetable Bake Recipe

This vegetable dish is made with frozen carrots, broccoli, and cauliflower. It pairs well with creamy cheese. Before adding frozen vegetables to the baking dish, they must be thawed. The vegetable bake will not get too soggy if they are drained in a large colander for at most 15 minutes.

Ingredients

Nonstick cooking spray

2 (16-ounce) boxes of frozen carrots, broccoli, and cauliflower, thawed and rinsed (see Tip

1 (12-ounce) can evaporated fat-free milk

1/4 cup finely chopped onion

Two tablespoons of all-purpose flour

Two cloves garlic, minced

1/4 teaspoon black pepper

3/4 cup shredded reduced-fat cheddar cheese (3 ounces)

1/2 (8-ounce) package reduced-fat cream cheese (Neufchatel), cut up and softened

2/3 cup soft whole-wheat bread crumbs (1 slice)

Two tablespoons snipped fresh parsley and/or snipped fresh basil (Optional)

Directions

Preheat oven to 350°F. Spray a 2-quart baking dish square with cooking spray. Place the thawed veggies in the baking dish. Set aside.

Mix evaporated milk with onion, flour, and garlic in a medium saucepan. Stir over medium heat to thicken and bubble. Turn off the heat. Mix in cheddar cheese and cream cheese. Whisk until smooth.

Spread the cheese mixture evenly on the vegetables. Mix the sauce gently with vegetables. Sprinkle with breadcrumbs. Add cooking spray to lightly coat the crumbs.

Bake for 40-45 minutes or until the mixture is bubbly. Crumbs should be lightly browned. Allow cooling for five minutes before serving. Sprinkle with basil and/or parsley if desired.

Tip

Place vegetables in a colander or place them in the fridge overnight. Run cool water over vegetables. Allow draining for 15 minutes.
